  2. 1 Pepper
  3. 1 carrot

  3. Meanwhile, cut the pepper into strips. Grate the carrot (no need to peel), grate the garlic.
  4. Add beef mince to frying pan and cook until browned (5 mins). Add the carrot, pepper, garlic and Mexican style spice mix. Cook for a further 2-3 mins.
  5. Add the tomato passata, water and beef stock paste. Stir and bring to boil. Once boiling reduce heat to simmer until the sauce is thick (10-12 mins).
  6. While everything is cooking, drain and rinse the black beans, then stir into the beef.
  7. Grate the cheese, trim and thinly slice the spring onion and keep to one side. Cut the lime into wedges.
  8. When the wedges are ready transfer to an over proof dish. Once the sauce has thickened, pour over the wedges and sprinkle over the cheese.
  9. Place over proof dish under the grill for 2-3 mins until cheese has melted.
  10. Once out of the grill, sprinkle over spring onions and serve with lime wedges.
