  1. 1 aubergine, thinly sliced
  2. 2 tbsp dry oregano
  3. 2 tbsp olive oil
  4. 2 potatoes, thinly sliced
  5. 1 big red onion, thinly sliced
  6. Vegan ragu
  7. White sauce
  8. Some grated cheese
  9. Some Parmesan cheese
  10. Salt and pepper to taste

Instructions to make to make Vegetarian moussaka 🌿

  1. On a medium heat pan, add some olive oil in and pan fry aubergine until soft on both side. Once cooked take them out and leave it aside.
  2. On the same pan, quick fry potatoes until they nearly cooked and add red onion in, quick stir and leave it aside.
  3. Prep your ragu sauce base
  4. Prep your white sauce base
  5. Add about 4 tbsp of white sauce into ragu sauce and mix well.
  6. Start assemble your dish, lay your potatoes and onions at the bottom tray that you are going to bake, then add the ragu sauce on top, spread it out evenly then add white sauce on top. Spread it evenly.
  7. Then lay out your aubergine evenly and finish with the white sauce on top.
  8. Sprinkle some of your preferred cheese on top and top with parmesan cheese
  9. Bake in oven at 200c for 35-45 min or until all cooked through. Serve with salad.
