  1. Mix flour with salt and pepper. Pat dry the beef and toss the meat in the flour.
  2. Heat the oil and butter in a pot, fry the beef cubes for about 3 mins. Reserve.
  3. Add the onions, bacon cook for about 5-7 mins, until bacon is crispy and onions turned translucent.
  4. Add carrots, celery about 5 mins.
  5. Add tomato puree and continue to cook for 5 mins.
  6. Add beef back to the pot, salt pepper, Worcestershire sauce, minced garlic, thyme, potatoes add 2 cups of water bring to low heat and simmer for 2.5 hours.
  7. After 2.5 hours, remove the lid. Cook for an additional 30 minutes to reduce. Remove the thyme stems, add minced parsley.
  8. Salt and pepper to taste. Serve with some soda bread.
